Smoked Salmon Tea Sandwiches

These little tea sandwiches are a perfect summer recipe- {almost} no cooking involved! This is the kind of light food that in my Southern mind is always "shower food", but they make a great appetizer or light lunch too. Just delicious smoked salmon, dill cream cheese, and some watercress for a little spicy bite, on lightly toasted bread. They may seem girly but my husband sure gobbled these up too :)
These sandwiches are very simple so quality of the ingredients is important- good smoked salmon and some lovely fresh bread from the bakery.

Smoked Salmon Tea Sandwiches

Makes 4 sandwiches
8 oz best quality smoked salmon
4 oz cream cheese, softened
1/4 cup fresh dill, chopped
Bunch of watercress or arugula leaves
8 slices white sandwich bread
1. Lightly toast the sandwich bread. Cool on a wire rack (so it doesn't get soggy). Cut off crusts.
2. Combine the cream cheese and dill in a food processor and blend until well combined.
3. Spread the dill cream cheese evenly over 4 of the slices of bread. Top with smoked salmon and watercress leaves. Top with remaining bread, slice into quarters, and enjoy!
