Avocado Toasts and Guava Lime Cocktails


I served these Avocado Toasts along with Guava Lime Cocktails as appetizers for a Mexican-themed dinner party. These toasts seem so simple- just mashed avocado mixed with a little seasoning, topped with radish and crumbled cotija cheese- but are unexpectedly fabulous. They are highly addictive! I loved these so much that I made several as my lunch for the next day. They go wonderfully with the tropical cocktail of lime, guava, and rum.  Cheers!


Avocado Toasts

Adapted from 1000 Mexican Recipes by Marge Poore

White sandwich type rolls (Bolillos if you can find them)
2 ripe avocados
1 poblano pepper, seeded and finely diced
1 lime
2 tablespoons mayonnaise
3-4 radishes, cut into very small matchsticks
1/2 cup crumbled cojita cheese

1. Slice bread and lightly toast in oven. Cool.
2. In a bowl, mash the avocados. Stir in poblano, juice of the lime, and the mayo. Spread onto the bread. Top with radishes and crumbled cheese.

Guava Lime Cocktail

Limeade
Guava nectar (usually it's in the "Hispanic" foods aisle)
Dark rum
Lime wedges

1. Mix 2 parts limeade:1 part guava: 1 part rum. Serve with fresh lime wedge.
