Banana Fritters


Oh Lord! These are good! They are incredibly addictive- basically like a banana beignet! You even get the powdered sugar effect.  Since all you really need to do here is mash some bananas, these are much easier to make. And fruit = healthy, right?

Banana Fritters

Serves 4

2 ripe (but not overripe) bananas
1/2 cup all-purpose flour
1/3-1/2 cup sugar, to taste
2 cups peanut oil

1.Mash the bananas; add sugar and flour to make sticky dough.
2. Heat peanut oil in wok over medium-high until a drop of dough bubbles and rises to the top within 15 seconds. Drop dough in tablespoons into oil; as many dumplings as can fit comfortably. Cook until golden-brown, turn, cook other side. (They are better if they are on the darker side and very crispy). Drain.
3. Top with powdered sugar and eat while hot.
